Chilled Potato and Tarragon Salad with Kissed Dijon Maple Dressing

This is the perfect side dish to make with leftover potatoes. I will often cook more potatoes than I need for dinner so I have them in the fridge to make this recipe for lunch the next day. The Kissed Dijon Maple Dressing with fresh tarragon brings the potatoes to life! Paired with some free range rotisserie chicken and a crunchy green salad it is simply amazing!

Ingredients:

  • 2 cups new potatoes

  • A handful of fresh tarragon

  • 2 Tbsp Kissed Dijon Maple Dressing

  • Maldon Sea Salt

  • Freshly ground pepper

  • BUY THE DRESSING

    Directions: 

    STEP ONE

    Bring a pot of water to the boil, add the new potatoes and leave to cook for 20 to 25 mins.

    They are ready when they slip easily off a sharp knife.

    Rinse and Chop the Tarragon.

    Cool the potatoes under some cold running water and leave in the fridge until you are ready to use them


    STEP TWO

    Cut the potatoes in halves and place in a salad bowl, then simply add the chopped tarragon and Dijon Maple Salad Dressing along with salt and pepper to taste.

    Maldon Sea Salt is the very best to use .. you don’t need a lot… but what you do add really brings out the flavor. My children call it Magic Salt!!

    STEP THREE

    Enjoy as a side dish to warm rotisserie chicken, or cool grilled salmon and a fresh green salad. Or keep it super simple and have it with cooked and cooled green beans.
